De Cecco
De Cecco is an Italian pasta brand with deep roots in Abruzzo, in the mountain town of Fara San Martino. Its story begins in 1831, when Nicola Antonio De Cecco started a mill there. In 1886 the family moved into pasta production with its own pasta factory, laying the foundation for a name that has become widely associated with high-quality Italian pasta around the world.
At the heart of the brand is the “De Cecco method”, a focus on ingredients and strict process control. De Cecco highlights careful durum wheat selection for quality even before the harvest, and milling in Fara San Martino. From there, attention shifts to texture and sauce-holding performance, including trafilatura al bronzo (bronze-die extrusion), which gives pasta a slightly rougher surface.
Another key pillar is slow drying at low temperatures. De Cecco explains that this approach helps retain flavour and nutritional quality, and prevents the formation of substances that are not naturally present in the ingredients. The payoff is pasta with a satisfying bite, consistent cooking results, and a clean, wheat-forward taste that stands up even in simple dishes.
