De Cecco Mezzi Rigatoni No. 26 is produced using traditional methods that remain faithful to a long-standing family recipe. Since 1886, De Cecco has selected durum wheat from Italy and around the world to guarantee consistent quality. The wheat is strictly quality-checked before milling, and the semolina is processed in a way that helps keep the gluten structure intact for a firm bite and a milder flavour. By mixing the semolina with cold water at a temperature below 15 C, the pasta gains extra firmness during cooking. It is then slowly dried at low temperatures to preserve the qualities of the wheat.
