De Cecco Spaghetti No. 12 is produced using traditional methods that remain faithful to a long-standing family recipe. Carefully selected durum wheat is used and the semolina is quality-checked before milling. By mixing the semolina with cold water at a temperature below 15 C, the spaghetti achieves a pleasant firmness during cooking. The pasta is then slowly dried at low temperatures to preserve the qualities of the wheat, resulting in a fine texture and a full flavour.
