De Cecco Penne Rigate No. 41 is produced using traditional methods that have been followed for generations. Since 1886, De Cecco has selected the best durum wheat from Italy and other origins to ensure consistent pasta quality. The wheat is strictly quality-checked before milling. The semolina is processed in a way that helps preserve the gluten structure, resulting in a pleasant bite and a milder flavour. By mixing the semolina with cold water at a temperature below 15 C and slowly drying the pasta at low temperatures, the qualities of the wheat are well preserved.
