De Cecco Riso No. 74 is a durum wheat semolina pasta produced using traditional methods that remain faithful to a 125-year-old family recipe. Since 1886, De Cecco has selected the best durum wheat from Italy and around the world to guarantee consistent quality. The wheat is strictly quality-checked before milling. The semolina is processed in a way that helps preserve the gluten structure for a pleasant bite and a milder, slightly sweeter taste. By mixing the semolina with cold water at a temperature below 15 C and slowly drying the pasta at low temperatures, the organoleptic qualities of the wheat are preserved.
