De Cecco Linguine No. 7 is made using traditional production methods that have been passed down within the family for generations. Since 1886, De Cecco has selected high-quality durum wheat from Italy and other regions to ensure consistent pasta quality. The semolina is carefully checked and processed in a way that preserves the gluten structure, resulting in a pleasant texture and firm bite. By mixing the semolina with cold water at a temperature below 15 C and slowly drying the pasta at low temperatures, the qualities of the wheat are optimally preserved.
