De Cecco Fusilli No. 34 is produced using traditional methods that have been passed down for generations. Since 1886, De Cecco has carefully selected durum wheat from Italy and other origins to ensure consistent quality. The semolina is strictly quality-checked and processed in a way that helps preserve the gluten structure, resulting in a pleasant bite and mild flavour. By mixing the semolina with cold water at a temperature below 15 C and slowly drying the pasta at low temperatures, the qualities of the wheat are optimally preserved.
