De Cecco Farfalle No. 93 is a durum wheat semolina pasta produced using traditional methods that remain faithful to a long-standing family recipe. Since 1886, De Cecco has selected the best durum wheat from Italy and other origins to guarantee consistent quality. The wheat is strictly quality-checked before milling. The semolina is processed in a way that helps preserve the gluten structure for a pleasant bite and a milder, slightly sweeter taste. By mixing the semolina with cold water at a temperature below 15 C and slowly drying the pasta at low temperatures, the qualities of the wheat are well preserved.
